Typically, light to medium roasted beans are ready after about 12-14 days. However, if your beans have undergone particularly complex processing methods, such as the currently popular anaerobic or various honey processes, or if they are dark roasted, they tend to be slower to develop. These beans usually require more time to settle and for their flavors to unfold, often needing 2-3 weeks to slowly mature before their deep aromas are fully released.
