✏️ Reference
Addisu Kidane is a coffee farmer from the Halo Beriti area in Gedeb, southern Ethiopia. Growing up in a coffee family, he later took over the family farm and has long focused on cultivating high-altitude indigenous coffee varieties. His coffee cherries are primarily processed by the Halo Beriti wet mill, where strict ripeness selection and grading result in a clean, distinctly sweet, and prominently floral and fruity flavor profile. Halo Beriti itself is not a single farm, but an important producing region and wet mill system located in Gedeb, serving thousands of small farmers in the surrounding area and producing specialty coffees with various processing methods such as washed and natural. Within this structure, Addisu Kidane's name can be clearly identified, making him one of the representative individual producers in the region. This also allows the terroir of Halo Beriti to be more fully presented in the cup through single-producer micro-lots.
🚨 Coffee Bean Resting Recommendation
Freshly roasted coffee beans need time for their aromatic compounds and oils to mature and develop. Proper resting helps the beans express a more stable and balanced flavour. We recommend waiting 2–3 weeks from the roast date before brewing for the best results.
※ Light to medium roast: 12–14 days
※ Medium-dark roast and specialty processed beans: 2–3 weeks
