Ethiopia is the birthplace of coffee. Legend has it that a shepherd named Kaldi discovered the mysterious red fruit—coffee—while grazing his goats in the forest, marking the beginning of a coffee market that has lasted for thousands of years. Ethiopia remains a highly significant coffee-exporting nation in the world, with major regions including Sidama, Yirgacheffe, Kochere, Harar, and Jimma. Sidama, Yirgacheffe, and Kochere in southern Ethiopia are the primary regions for washed specialty beans, renowned for their excellent fruity characteristics and delicate, elegant flavor profiles. Yirgacheffe, a small town within Sidama, is Ethiopia's most famous region. It sits at an average altitude of 1,850 to 2,400 meters with an annual rainfall of 1,300mm. In the local dialect, the name means "wetlands." At high noon, the area is often covered by "shading clouds" and "shading mist," which provide shade and a cooling effect. Due to its unique geographical environment and distinctive flavor profile, it was separated from the Sidama region.
Aricha is located in the western valley of the Yirgacheffe region, an area frequently shrouded in mist with fertile soil. The significant temperature difference between day and night allows coffee trees to perform vigorous photosynthesis during the day to accumulate sugars, while the low nighttime temperatures slow down respiration, creating the rich sweetness and bright aroma characteristic of high-altitude beans.

Freshly roasted coffee beans require time for their internal aromatic compounds and oils to mature and transform. A proper degassing period allows the coffee beans to express their most stable flavours. Therefore, waiting 2-3 weeks from the roast date before brewing will result in a better coffee flavour.
