Ethiopia is the birthplace of coffee. Legend has it that a humble shepherd named Kaldi discovered these mysterious red berries while tending to his flock in the forests of western Ethiopia, marking the beginning of the millennia-old coffee market. Ethiopia remains one of the world's most important coffee-exporting nations, with major production regions including Sidama, Yirgacheffe, Kochere, Harar, and Djimma. The southern regions of Sidama, Yirgacheffe, and Kochere are the primary areas for washed specialty beans, renowned for their excellent fruit profiles and delicate, elegant flavors.
Nensebo is located on the southeastern edge of Sidama, adjacent to the high-altitude mountains of the Arsi range. The fertile soil and abundant shade from native forests, combined with the significant day-to-night temperature variations brought by the extreme altitude, result in slow-maturing, dense coffee cherries that possess excellent sweetness and body.

 

🚨 Resting Suggestions
Freshly roasted coffee beans require time for their internal aromatic compounds and oils to mature and transform. Proper resting allows the beans to express their most stable flavours. Therefore, for the best tasting experience, we recommend waiting 2-3 weeks from the roast date before brewing.

 Medium-Dark Roast and Special Processes: 2-3 weeks
