Finca Candela located in the Piedra Candela region near La Amistad National Park, is part of Guatemala’s Anacafe14 series. This coffee carries the unique spice notes of its variety combined with regional characteristics, offering a rich creamy mouthfeel. Anacafe14 is a natural hybrid of Timor Hybrid × Caturra × Pacamara, discovered in 1980. In 2014, Guatemala’s coffee authority ANACAFÉ officially released this variety to the market.

Casa Ruiz Cooperative in Panama was established in 1979 and is one of the most renowned cooperatives in the Boquete region near Volcán Barú. Its headquarters are located in the valley at the foothills of Volcán Barú. The family-run cooperative has been passed down for three generations and now includes over 300 small family farms and estates as partners, involved from cultivation and processing to marketing. Many of the estates, such as Berlina, Maunier, Panamaria, and Café Ruiz, have histories exceeding a hundred years. Unlike other cooperatives that increase planting area at the expense of the environment to boost yields, Casa Ruiz and its partners follow traditional, environmentally friendly farming methods of the Boquete region. To improve green bean quality, they have implemented stricter protocols throughout every stage of processing—including cultivation, processing, sorting, and storage.
🚨 About Ordering
Coffee beans are freshly roasted every week. The cutoff for orders is on Tuesday, and the beans are roasted on Thursday, and will be shipped out on the following Monday.
🚨 Degas / Flavour maturation Recommendation
Freshly roasted coffee beans need some time to rest after roasting. Degassing let the excessive carbon dioxide that produce during roasting comes out from the beans, during these time, flavours of the Coffee will be maturer and more stable for better extraction and brewing results.
