👹 Medium Dark Roast
Currently, specialty coffee is mostly roasted to a medium level (Agtron #65~55) to highlight the distinct aroma, fruit-like acidity, and rich flavours during cupping evaluations and competitions.
The deeply roasted version of this specialty coffee we are now offering takes a different approach from the currently popular coffee flavour interpretations, and is more aligned with the direction of Japanese Kissaten Style. It emphasizes "taste" rather than "flavour." It has an irreplaceable, deep and sweet aroma, an elegant bitterness on the palate, a clean and full-bodied mouthfeel, and a smooth, lingering, and sweet aftertaste.
🚨 About Ordering
Coffee beans are freshly roasted every week. The cutoff for orders is on Tuesday, and the beans are roasted on Thursday, and will be shipped out on the following Monday.
🚨 Degas / Flavour maturation Recommendation
Freshly roasted coffee beans need some time to rest after roasting. Degassing let the excessive carbon dioxide that produce during roasting comes out from the beans, during these time, flavours of the Coffee will be maturer and more stable for better extraction and brewing results.
